Often at Spyhouse, we focus on singularity in coffees. Many of our seasonal single origin offerings come from just one farm. In many cases, they are even just a single variety or are processed in a very specific way. While these coffees are truly stunning and unique, it is important to remember that excellent coffee can also come from a multiplicity.
Many different coffees grown by skilled hands can come together to create something more than just the sum of their parts. This coffee from Papua New Guinea is a perfect example of this. The coffee lots that contributed to this coffee are grown by up to 1500 smallholder producers. The size of these producers’ farms averages about 1-2 hectares each, with much of that space devoted to other crops. Because small multi-crop farms are the norm in Papua New Guinea, most farmers sell their harvested coffee cherries to a regional mill like Kindeng, where they are sorted and blended to ensure cohesive flavor. The team at Kindeng then dries the cherries to a precise moisture content over the course of a month before stripping the dry coffee cherry and parchment away to prepare them for export. The result is a coffee that captures the unique flavors of the Western Highlands of Papua New Guinea.
