This coffee is from Alo Coffee, founded by the husband-and-wife team Tamiru and Messi. Tamiru, a former university teacher and electrical engineer, worked in coffee for years and became frustrated with constant unfair pricing and the undervaluation of labor. His experience in the 2020 Ethiopia Cup of Excellence competition gave him and Messi the hope and inspiration they needed to branch out on their own. Their mission was, “to prove that Sidama’s finest coffees could stand among the world’s best,” and in 2021 their submission won Ethiopia’s Cup of Excellence.
Instead of the cherries being dried whole as with a naturally processed coffee, these cherries are pulped and left to sit dry in the mucilage to ferment for about a week. Once that mucilage turns dark and sticky, it is rinsed off and left to dry until it reaches the optimal moisture content. This is a relatively new process as of the last 5 years.
