Cajamarca / Peru
Cajamarca starts off with a punch of stone fruit flavors, primarily showcased as ripe nectarine and grilled peach. As the flavors develop, notes of chocolate and cherry, alongside a tart creaminess, come to the forefront, reminding us of s’mores and cherry cordials. This coffee has a broad spectrum of flavors, reflecting the unique elements provided by each of the community members’ contributions. It is the perfect coffee for sharing with friends around the first campfires of the season.

The Cajamarca region of northern Peru is filled with pockets of small villages with coffee farmers. Some of these farms are as much as an eight-hour drive from the nearest city where the coffee mills are headquartered. Three years ago, we traveled out to some these farms and a broad range of approaches to coffee processing was revealed. Many of these individual farmers have had to develop unique methods of washing and drying their coffee harvests. The high elevations, vast range, and the sheer amount of varieties leads to coffees that are very unique. However, many of these producers are too small to isolate into micro-lots and most mills lack the means to support that many individual separations if it were practical. This offering is a blend of multiple smallholder farmers, combined based on their general proximity and complementary cup profiles. Bringing all these individuals together has created a cup that expresses all of their uniqueness in unified beauty.
