In celebration of Spyhouse’s 25th birthday, we’ve prepared a very special and exclusive release. Over the last 25 years, we’ve made it our mission to cultivate relationships with those who share our passion for exceptional quality coffee. We could think of no better way to celebrate than to highlight a one-of-a-kind coffee from a producer who has truly achieved excellence in quality and used his passion for exceptional coffee to lift others in his community. We proudly present Ángel Arturo Paz Ramírez’s Gesha—his most prized lot.
One part of what makes this coffee so special is the taxonomical significance of the Gesha variety. Most of the world’s Arabica coffee hails from just a few coffee plants native to Ethiopia that were appropriated by the Dutch, French, and British in the 17th and 18th centuries. They were then distributed for mass cultivation among their colonies between the tropics. Like most fruits and vegetables in your local produce department, Arabica coffee has many sub-species or varieties. Over the last few hundred years, the varieties that were initially widespread have been strategically crossbred for ease of harvest, climate adaptability, pest/disease resistance, and/or flavor quality. Though many new varieties have been created from these plants, they remain genetically very similar, which can pose a serious risk to coffee’s longevity if the wrong disease or pest comes along. Because the species of Coffea Arabica’s roots lie in Ethiopia, there is still a wealth of genetic diversity that continues to flourish today.
As a means of introducing more genetic diversity to coffee in Costa Rica, a team formed by the Tropical Agricultural Research and Higher Education Center traveled to the Gori Gesha forest in Ethiopia in search of new coffee varieties. They returned with several new seeds, but the most notable among them is what is now one of the most sought-after and revered coffee varieties in the world. However, it wouldn’t be recognized as such until the 2004 Best of Panama auction, where a coffee lot grown on the now infamous farm, Hacienda La Esmeralda, blew away the competition and commanded record-breaking prices. Since then, the variety has become more popular and widespread but is still relatively rare due to the plant being quite expensive, producing a relatively low yield, and being difficult to harvest due to the tall height of the plant. These reasons make it a high risk but potentially high reward for farmers skilled enough to care properly for the plant. When grown and processed well, Gesha features standout flavors typically only found in Ethiopian coffees—delicate floral notes, a rich fruity sweetness, and an irresistible juicy acidity.
A Gesha plant could not ask to be in better hands than those of Ángel Arturo Paz Ramírez. Ángel comes from a coffee-growing family and is known for consistently producing some of the most stunning coffees in Honduras. He and the rest of the Paz family own a dry mill and an exporting company called San Vicente of which Spyhouse is a long-time partner. Several of our favorite coffees every year come from San Vicente, including those produced by Osmin Reyes, Sandra Trochez, and Otillio Levia. Together, they are deeply invested in improving the coffee quality in the Santa Barbara region of Honduras. They have tirelessly pursued research into finding the best pairings of coffee varieties to microclimates and inspired confidence in other producers in the area through their success and partnership.

Ángel’s Gesha is truly an exceptional coffee. A soft bouquet of floral notes in the aroma adds complexity to the rich caramelized sugary sweetness that reminds us of wildflower honey over Crème Brûlée. A juicy, citric, acidity adds just the right amount of brightness to meet the sweetness in perfect harmony. We count ourselves incredibly lucky to be one of only a handful of roasters given the opportunity to roast Ángel’s coffee. We hope you enjoy and cherish it as much as we do.
