The Las Lajas micromill in the Central Valley region is cited as one of the most significant innovators in Costa Rican coffee and beyond. In 2005, Oscar and Francisca Chacón decided to open their own micromill. After two generations of selling their harvested cherries to a cooperative for market price, starting their own milling operation came with an intimidating learning curve. The Chacóns took to this challenge with a diligent, systematic approach, and it didn’t take long before they were producing some of the most distinctive coffees anywhere. Their drive to constantly improve their coffee has led them to develop eight honey and natural processing methods, each with its own unique drying technique, to highlight the distinct qualities of the coffee grown on their farms.
This offering from Las Lajas comes from their La Julia farm and uses their Perla Negra natural process. After picking, the cherries are first dried in thin layers for 10 days before being moved to clean sacks where they are sealed and rested for 3 days. After the initial 13 days, the cherries are spread out on raised beds and turned twice a day. This is an extremely slow drying process, which allows for more fermentation time to develop deeply complex and intense flavors.
