Jesus Sabillon is a third-generation coffee farmer and learned much of the trade from his father. When he was young, he and his brothers began getting hands-on experience by helping their father with the harvest. He would later inherit one hectare (~2.5 acres) of land from his father, where he began planting corn and beans to prepare the soil for coffee. A couple of years after these initial crops, he had a coffee farm of his very own. As the years went by, Jesus began acquiring more and more land, and with the help of his neighbors in 2019, he transitioned from selling his coffee as conventional to processing it as specialty grade.

Coffee Bio
Jesus grows just two varieties of coffee on his farm, and the lot we've selected this year is a washed-processed Parainema variety. This variety is developed in Honduras and has a good yield and high pest and disease resistance. It has a lovely acid-forward cup quality, making it great for growing and drinking. In this coffee, we find a punchy, juicy lemon-lime acidity with a mild nuttiness and mellow fruity flavors.
