Vicente Diaz's washed Pacas is full of dark sugar tones, calling to mind apple dumplings and maple pecan candies; this sweetness is offset with a subtle creaminess that reminds us of Irish Cream.

Coffee Bio

Vicente Rafael Diaz manages Finca El Durrumbo in the lower elevations of the Chalatenango region of El Salvador. This region produces many of the greatest coffees in El Salvador, including one of our annual favorite producers Ignacio Gutierrez. Coffees from here are known for their vast complexity due to the rich volcanic soil. Growing Pacas, a variety known for its richness, at a lower elevation, allows Vicente to produce a coffee with an amazingly dynamic range of darkened sugar flavors. This coffee comes to us through Café Imports’ Pequeños project, developed by green buyer Piero, a Salvadorian himself. The program focuses on individual producers in the Chalate region on a scale that allows them to focus on and maximize the output of these very small lots. 

Vicente Diaz is full of dark sugar tones, calling to mind apple dumplings and maple pecan candies; this sweetness is offset with a subtle creaminess that reminds us of Irish Cream. As the cup cools, it opens up, revealing a touch of navel orange-like citrus acidity, providing a nice sparkle to a rich and sweet cup. This coffee is very balanced and refined for all of its complex sugars. It is the perfect coffee for the crisp air and crunching leaves.
