Mardoqueo Estela Diaz proves that sometimes simpler is better. With a small hand-cranked depulper and single, small cement washing tank, he is able to produce beautiful coffee. Of the over 2,000 small producers of CENFROCAFE, we find him to be a true standout. Our Director of Coffee/Green Buyer, Tony, traveled with an international team of cuppers lead by Café Imports to help CENFROCAFE select single producer lots to submit to Peru's national coffee competition. Mardoqueo's lot placed in the top 3, and was Tony's favorite. The following day the group traveled six hours to meet with Mardoqueo at his home, located directly above his farm, to hear from him why his product so unique. The simplicity of this system was refreshing. In addition to his simple washing station, he dries his coffee in the rafters of the bodega he operates in the front half of his home in order to optimize airflow and drying. The sweetness and clarity he is able to produce with such a primitive system is amazing.
Mardoqueo Diaz has strong stone fruit tones that shift through peach, nectarine, apricot, and plum as the temperature changes. Underlying chocolate, toffee, almond and coconut tones remind us of English toffee and macaroons, creating a very balanced and sweet coffee. It is the perfect coffee to pair with evening desserts as the sun starts setting later and later.
