Luiz Paulo’s anaerobic-processed lot starts off very smooth and chocolaty, with the creaminess of almond butter. As the cup cools, notes of red fruit and spices come forward to remind us of cherry cola. This coffee has a very velvety body which adds to the feeling of richness in a very unique way. It is the perfect coffee for sharing with the family on the weekend as it can be loved by just about everyone.

Luiz Paulo’s father, Isidro Pereira, purchased Fazenda IP in 1967 while Luiz was pursuing a degree in agriculture. Five years following the purchase, he transitioned his focus to working on the family’s farms to expand production and increase quality. We at Spyhouse have been buying from the family since our very first year. Our founder visited Fazenda IP while exploring the pathway to starting our roasting program. This past fall, our Director of Coffee visited IP again and saw this same unique lot being processed. Anaerobic processing ferments the coffee cherry in sealed water tanks that force all oxygen out of the system. The oxygen-free environment causes a completely different fermentation process. Following the anaerobic fermentation, this lot was sun-dried, like a typical natural-process coffee from Brazil.
