Agua Colorada is rich and sweet with tropical fruit flavors developing into watermelon hard candies as it cools. The fruit sweetness is contrasted by notes of spiced, candied almonds, and a chocolate malt finish. This coffee has a ton of classic sweetness that reminds us of childhood summertime. It is the perfect coffee to bring to the cabin for a weekend getaway or treat yourself on a sunny weekend morning.

Gilmer’s father, Filadelpo Cordova Mejia, acquired Finca Ecológica in 1990 in order to begin producing coffee. Gilmer now manages the operations of the farm to strict standards. On the four acres dedicated primarily to Caturra, Gilmer uses only compost and guano as fertilizer to preserve an organic practice. Additionally, he hand-picks each cherry as they reach peak ripeness, protected by the cover of wild shade trees. Gilmer is young, innovative, and passionate about quality. Every aspect of his farm is carefully managed, producing a wonderful final cup. When our Director of Coffee traveled through Peru, he was blown away by the quality of coffee coming out of small producers like Gilmer. Some of these farmers are nearly a day’s travel from their cooperative’s offices and they still are able to maintain communication and a focus on quality. The challenges in producing beautiful coffees while maintaining organic standards are unimaginable, yet the vast number of people doing it astounds us.
