For the first time, Spyhouse is thrilled to offer the Honduras Sandra Trochez. This is the final coffee in our most recent trio of producers from the Santa Barbara region of Honduras. Sandra’s husband, Juan Amado Fernandez, was a third-generation coffee producer. In 2006, his father gave him a 5-hectare plot of land to call his own. The next year, Sandra and Amado were married and began producing and maintaining varietals such as Catuai, Pacas, and Parainema on the land.
In 2010, they won the Honduras Cup of Excellence with a score of 91.45 and opened themselves up to a much larger craft coffee market. In 2019, Amado tragically passed away, leaving the farm to Sandra and her three children. In the wake of such devastation, Sandra showed a willingness, motivation, and ambition to maintain the land and its treasures. She has toiled to produce some of the best coffee the country has to offer, and we can’t wait to see what next year looks like for her!

The Sandra Trochez delivers a deep, dense, and intensely sweet cup. Candied navel orange is structured by dark chocolate and toasted nuts, reminding us of a velvety walnut fudge brownie. The cup then gives way to rich cascading flavors of toasted coconut and juicy bing cherry. This coffee couldn’t have arrived at a better time.
