Our organic decaf coffee is made through the most natural and sustainable process, preserving the most true representation of the coffee's inherent flavor.
This coffee is a water-processed decaf done in a facility in Mexico, Descamex. To remove the caffeine using this process, green coffee is soaked in a water solution, which removes both the caffeine and other solubles in the coffee (many things that make up the complex flavor compounds found within green coffee). The water is then removed from the green coffee and run through a special filter that captures caffeine molecules and allows them to be strained from the solution. That solution, now containing flavor compounds but no caffeine, is then re-introduced to the green coffee beans, which reabsorb the soluble materials. Once the coffee is dried, it is then ready for export.
This is a classically good cup of decaf, the quality you’d expect from an organic Mexico. It is light and well-balanced. There are caramel and graham cracker notes at the front, and it ends with a clean finish.
