Baltazar Ramirez is a producer of organic coffee, originally from the municipality of Jacaltenango, department of Huehuetenango. In 2016, Ramirez joined ADIPY as an organic coffee partner, seeking to improve its production and price fair. During the inspection of his plot, the producer expressed his gratitude to the ADIPY association for opening its doors, and to the buyers for making the quality of his product known and obtaining a good income to support his family.
Don Baltazar uses clean water to obtain a good quality of coffee by harvesting the fruit at optimal maturation. The coffee is de-pulped, then washed, and left to undergo fermentation for 18–24 hours depending on the climate. Cherries are washed at least 3 times with clean water, and then the coffee must be drained and left on the patio drying pad (nylon) with a thickness of 2 to 3 centimeters to prevent the coffee from losing its quality. Drying can take 3–6 days.
